The tea leaves used to produce TORA Ceremonial Matcha are grown on the lush, fertile slopes of the Kirishima mountains deep in the heart of southern Japan. Here, the climate is ideal for tea cultivation: warm, stable temperatures, high humidity and rich volcanic soil create some of the best growing conditions in all of Japan. Many tea farmers harvest their crop several times each season; however, the very best matcha is produced from leaves of the first flush, or harvest of the year. In Japanese, these leaves are known as ichibancha (一番茶), or "first-picked tea." Only the finest ceremonial grade matcha is produced from ichibancha, and TORA Ceremonial Matcha is no exception!

Roughly, one month before the first flush, the tea fields are shaded by a canopy of black netting known as a tana (棚). The tana gradually limits the amount of sunlight the tea bushes receive as the spring growing season draws to a close. The highest quality tea leaves are grown in near darkness by the time harvest arrives. These leaves are smaller, softer and thinner than ordinary tea leaves but contain many more amino acids. The high amino acid content of these young leaves are what gives TORA Ceremonial Matcha its characteristic sweet and smooth flavor. Shading the tea also dramatically increases the production of chlorophyll, the pigment responsible for the strikingly beautiful, emerald color of this tea.

After harvest, the leaves are then lightly steamed and dried to prevent oxidation. The steaming process helps to preserve the tea's rich color and halt the breakdown of amino acids. Next, the stems and veins are meticulously removed from each leaf to ensure optimal taste and quality. Ground stems and leaf veins will significantly alter the flavor of matcha. Tea with the stems and veins removed is known as tencha. Real, high-grade matcha is produced only from the finest ground tencha leaves. Tencha is generally stored and refrigerated until it is ready to be ground into matcha...

The milling process requires great care, patience, and most importantly—time. Traditionally, high-quality matcha is slowly stone-ground between large granite disks for many hours on end. Just 30 grams of matcha can take over an hour to produce! Matcha should never be ground too quickly: the excessive heat generated from the friction of the disks can easily ruin the flavor. Once the tea has been milled, it is sealed and refrigerated until it is ready for shipment.

The tremendous amount of labor that goes into producing just one gram of quality organic matcha can easily explain the high cost of this type of tea.

Brewing Instructions

1.) Add 1 tsp (2 g) of matcha to an empty mug or tea bowl.

2.) To avoid clumping, add a small amount of cool water and stir or whisk matcha into a thick paste.

3.) Add 2-3 fl oz of hot water (160-175 °F) and stir or whisk briskly until a light green foam appears on the surface of tea.
